My Aunt Sharon shared this recipe with my older sister Heather, who, upon discovering how awesome it was, then shared it with me. I am now sharing it with permission.
Peel, clean, and cut up potatoes
Put in pot w/ chicken broth & bring to boil
Cook until potatoes are JUST this side of firm
Add a half a stick of butter
Add a can of evaporated milk
Add salt, pepper, and parsley
Add celery and onions
Add instant mashed potatoes to thicken
Stir
Top with bacon, chives or green onions, and cheese
This is the easiest, most delicious, potato soup ever! You have to try it! I recommend it with grilled cheese.
Bonus Tip: If you buy green onions, save the bulbs and put them in a glass of water and they will grow and you can use them again and again!
